Junk Food Chaos- My Journey



 Blood work BAD! I have high cholesterol, A1C (pre-diabetic) and high Triglycerides. Whew, guess it's time for a lifestyle change!

I started with healthy lifestyle eating a couple of months ago and I have to say....I am actually loving it! The food is GREAT! Bonus, I have lost 10 pounds! Surely my high everything has come down but that is pending on my next blood work. 

This is how I am doing it:

I'm a coffee addict...all day drinker. More like, I like a little coffee in with my creamer and sugar LOL!

I cut out the extra sugar added to my Joe and still using the creamer. Don't miss the extra sugar at all. 

My Coffee Addiction

Cut out most all breads and white potatoes and white rice. Don't miss it really. I still eat pita bread, egg roll wrappers for cooking and whole wheat carb-balanced wraps. They are so good and versatile, I really don't miss bread at all. 

90% No Processed foods, except yes, my coffee creamer. Don't miss it the other stuff. Bonus, I don't have to walk down many isles when grocery shopping :) Great for me, saves me time and money. I've learned not to walk down the junk food aisle, so I won't be tempted. That works. 

No Sodas. No Sweet Tea. No Chips, lunch meat or junk. 

The good part is, the food I have been making, is so delicious, healthy, quick, fresh and healthy! Nothing too fancy, but I do feel like I am eating at a gourmet restaurant lately even though I am the one doing the cooking. Chez' Shimmer! I have learned to take my time and make meals special, and yes, that does make a difference. 


I balance each meal with a variety to satisfy my palate....Something savory, something a little sweet, something crunchy, something salty...well you get the idea. Again, nothing fancy, but variety I found it key. I get to eat a lot of tasty food without skimping or starving and I am still losing weight. It's a win-win! 

My Key foods: Spinach, Olive oil, fish, Sweet potatoes, Olives, fruits, cabbage, veggies, apples, walnuts, oatmeal, spices and sauces, pita bread,egg rolls (I stuff with Curry flavored cabbage and air fry OMG so good). Egg whites too. I do eat Yogurt and cheese, but not much meat, due to the cholesterol. The Doc said my liver makes to much of it on it's own and it is hereditary. Bummer. I won't add extra too it though if I can help it.

So that is just a sample of my healthy me happy-eating life now. And, I am happy with it. Who knew? Wish I had done this long ago.....

Spicy Spagetti Squash with Cranberries-A New Experience

Being the adventurous person I am (with food anyway, ha ha), I seen the golden yellow large squash at the grocery store and thought to myself, hmm...lets try this vegetable thing. I've never had this type of squash but I've heard it was good and also healthy, so I did a cooking challenge with it! First, I cut in half. It was reallly hard to cut. Then, kinda gross, it smelled a bit unappetizing and had all this gunk and seeds inside. Ewe.. I don't know about this...but not giving up! Scraped this all out. Tried to make "spagetti noodles" with a fork but it turned out like slaw LOL. (I probably should have researched this first but it was too late and I was too hungry) Took a little nibble of the raw squash just to get an idea of the flavor...oh my! This might be good! A little sweet and very tasty, not what I was expecting! Mixed it up with EVOO and cumin, had another little taste and Yum! Also, added a little salt and pepper.  ...
