White Pizza - The Healthy Way

I just have to share this super quick and healthy remake of White Pizza- it is so good and super easy to make. Guilt Free yummy Eating!!

This is super versatile as you can add whatever toppings you like or have on hand. Ready in about 10 minutes!! Bonus: It's cheap too! Here is what I made today which it White Spinach Pizza but often times I will make a Mexican style or Greek version as well.

   White Spinach Pizza for One:
  • 1 Whole Wheat Pita Bread
  • 1 Cup of Spinach Fresh
  • 1 Tbsp Extra Virgin Olive Oil
  • Sliced Black Olives- as many as you want
  • Part Skim Low Fat Mozzarella Cheese shredded-Enough to Sprinkle on Top
  • 1 Tbsp Parmesan Cheese
  • Salt to Taste

Quick stir fry the spinach in a medium hot pan with the olive oil until wilted.

Spread spinach on top of the Pita Bread.
Add cheese, olives and salt. Air fry on high for about 5 minutes, or toast/broil until cheese is melted. That's it! Enjoy!
This is the low fat version, but if you don't mind a little extra calories, this is great if you add a tablespoon of Ricotta Cheese and a tablespoon of premade Alfredo sauce as the "Pizza Sauce" Add any spices you like-- Oregano, Basil, Garlic Powder

My Greek Version is Similar, Made with spinach, Feta Cheese, Mozzarella and more olives, and a sprinkle of Parmesan and Oregano. Thinly slices purple onions and mushrooms are also great on this. Mexican variation (another fave on mine!) Use Fat Free canned refried beans, sprinkle with Cumin (or taco seasoning), Top with Mozzarella and black olives. Chopped Cilantro is also great with this as well thinly sliced onion and avocado.

Spicy Spagetti Squash with Cranberries-A New Experience

Being the adventurous person I am (with food anyway, ha ha), I seen the golden yellow large squash at the grocery store and thought to myself, hmm...lets try this vegetable thing. I've never had this type of squash but I've heard it was good and also healthy, so I did a cooking challenge with it! First, I cut in half. It was reallly hard to cut. Then, kinda gross, it smelled a bit unappetizing and had all this gunk and seeds inside. Ewe.. I don't know about this...but not giving up! Scraped this all out. Tried to make "spagetti noodles" with a fork but it turned out like slaw LOL. (I probably should have researched this first but it was too late and I was too hungry) Took a little nibble of the raw squash just to get an idea of the flavor...oh my! This might be good! A little sweet and very tasty, not what I was expecting! Mixed it up with EVOO and cumin, had another little taste and Yum! Also, added a little salt and pepper.  ...
